Remarkable Restaurant There's no stopping Xavier Beaudiment, who seems to make inexorable progress with each visit to these magnificent volcanic landscapes high above Clermont. With each visit, new prowess, in this floral and vegetal line that brings him ever closer to his natural environment. Last time, the menu was dressed in a winter coat, for a warm stroll full of discoveries: from frog worked with savory, a very delicate dish, to catfish combined with pear and boletus, the sweetness of the fruit coating the fish in a very successful natural ballet. The perfectly-cooked venison, melting and flavorful, is complemented by pepper and hazelnut in an ultra-precise dosage, preceding the citrus dessert with Bachès fruit and a moist cake. The excellent work of sommelier Arnaud Kunz cannot be overemphasized, as he twirls between regional wines and grands crus with great erudition, on an exciting menu that explores the world and is enriched by a strong list of spirits. Young, very comfortable service, bread that could be improved.
