Chef's Restaurant Consistency and friendliness, consistent flavors year after year, especially if you return in the same season. The service, the tablecloths and the recipes don't have to change much either, guaranteeing two toques in a spirit of renewed tradition: mussels from the Thau Basin and new potatoes in salad, mousse rouille with saffron, zucchini and tomato confit in a well-matched ensemble, pigeon prepared with care, fillet cooked on a barbecue trunk, thigh in ballottine with chanterelles, reduced satay juice, coriander and cashew nut caramel, apricot in several textures, savarin cookie soaked in muscat, apricot rosemary sorbet, Dulcey chocolate ganache... Cellar large enough and varied enough to dispense with a dedicated sommelier, pleasant and attentive service.
