Chef's Restaurant In the midst of brasseries, traditional tables and grand hotels, this tassel brings a welcome breath of fresh air, proving that even in Cannes, creativity is possible. It's inventive, sophisticated bistronomy, largely supported by technology, featuring clever reinterpretations of the regional repertoire. As the season dictates, there's the interesting broccoli and roasted yeast cream, black sesame pesto and green mayonnaise, the cereal-crusted egg, cream of kale, roasted cauliflower and buckwheat, all in a declension of textures, roast free-range pig, tonnato sauce, spicy oil and croutons, a melting beef cheek confit, roasted carrots and polenta. A well-educated cellar with a dominantly organic and natural style.
