Gourmet Restaurant Un chef engagé pour une table de marché vraiment de marché, où la provenance et le respect des saisons priment sur tout le reste. Julien Panzani a le mérite d’associer éthique et plaisir, donne à ce sixième concurrentiel une adresse qui compte et qui plaît, où les amis se retrouvent autour d’une ardoise toujours en évolution. Pour 39 €, l’œuf fermier mollet, sarrasin à la moutarde, condiment betterave au gingembre, mousse de bleu au vinaigre de cidre et pickles, noix de saint-jacques fraîches fumées, compotée de lentilles vertes du Puy, crème de poulpe au zaatar, légumes marinés, ou encore une poitrine de veau fermier confite 24h aux baies et poivres, mousseline de carotte au curry, crème de yaourt aux herbes, légumes marinés.
