For over ten years, Jimmy and Sharon Frannais have been bringing Briançonnais gastronomy to life with their home on the banks of the Guisane. It's a fine bourgeois address where the menu features rather contemporary ideas, quite well executed: scallops in mother-of-pearl sauce, raw turnip in hot butter and seaweed noodles, rolled mostelle, roasted parsley root, spinach and chive oil, a wild partridge pithiviers with butternut, cebette and jus, a crunchy cabbage with very intense dark chocolate.
