Located directly across from the cathedral, the brasserie boasts one of the most beautiful views in the prefecture. The style is decidedly classic—as one would expect in this segment—with contemporary, crowd-pleasing dishes. On the menu: gravlax-style haddock tartare with beet reduction, herb espuma, and egg yolk cream; cod colombo; chicken breast with homemade mashed potatoes and deglazed vegetables… Creative desserts.
