Gourmet Restaurant In an alleyway just a few meters from the bustling Cours Saleya, Le Panier offers an unexpected journey. Reservations are recommended to enjoy one of the four different atmospheres, with the recent addition of a room opposite the main restaurant, the Myanmar, decorated like a country house. All that's left is to let yourself be carried away by one of the three blind menus in 4, 5 or 7 courses at €45 for lunch, €69 and €75 for dinner. A halo of words judiciously placed at the bottom of the menu lets us know what globe-trotting chef Aurélien Martin has in store for us. Like this first course, Cians trout gravlax, Corsican clementine condiment and beet pickles with trout skin chips, followed by romanesco cabbage and green apple in an espuma of green apple and bush. Fishing continues with a fillet of sea bream perfectly cooked on the skin and a celery declension, a purée of fermented celery with buckwheat, a green pepper sauce, a black garlic cream on roasted parsnip and a branch of samphire. Finally, the meat makes its appearance with a filet mignon of venison rosé through and through, chestnut gnocchi and a mishmash of yellow and red beet, a reduced cranberry jus accompanied by a raviole of shoulder confit in venison rillette. The attentive service makes up for the surprise and reveals the savoir-faire with detailed explanations for each dish. The wine cellar matches the cuisine, with a few natural wines, many biodynamic, and many wines for pleasure. The second toque is not far off.
