This appetite between dog and wolf, rather on the wolf side, translates here into prestige products: truffles, lobster, foie gras. Regulars appreciate it, but the good produce from the Halles or the Toulon fish market can also be used to serve a simpler, more straightforward cuisine. The €35 menu allows for these little fantasies while remaining wise, with scallop carpaccio, duck confit and chestnut Cévenole tart.
