Gourmet Restaurant This restaurant, housed in a former troglodytic tunnel, is a lovely bridge between the past and the present, where history can be appreciated through contemporary cuisine. Located at the foot of the magnificent Barbaste Towers Mill, Sébastien Gilbert's restaurant offers market cuisine from €25, including a salad of young shoots with gizzards and snails in parsley, cherry tomatoes, grilled bacon and hazelnuts, haddock flakes on a sweet potato parmentier and ginger cream, or caramelized pork ribs with soy and honey, creamy garlic apple and cooking juices.
