Chef's Restaurant Fine workmanship, know-how and consistency: this is an image of provincial gastronomy that must be defended and promoted. This is how Camille Constantin promotes a region, a town and his own 2-toque restaurant. Admittedly, we'd like to see local producers called upon a little more for a little less gambas and papaya, but the range is wide enough to satisfy: pâté en croûte, cassolette de la mer with mussel juice and lemongrass and rocket pesto, chocolate moelleux for a well-ordered sequence at €56.90. The cellar is as good as ever, forged by Karolin with erudition, mainly from France with a little from Austria, and a good selection by the glass (Rapet, Ollieux Romanis, Colette Faller...).
