Remarkable Restaurant The pressure's on! On the banks of the Aven river, where the memory of Gauguin and his friends hangs in the air, and where the galleries are just a touch away, any chef who sets up shop here must have a keen sense of aesthetics, knowing how to play with colors, volumes and the occupation of space... We must therefore salute the talent of Sébastien Martinez, who sends out visually stunning plates in perfect harmony with the gustatory pleasure they provide. From the outset, the amuse-bouches set the tone, a pretty condensation of what's to come. For example, the now emblematic dish of small Breton mussels, revealed and enhanced by the precise dosage of vinegar and Mexican chili, softened by a large drop of ribot milk. The superb pearly-white pollock is combined with roasted white asparagus, in sections, puréed and "watered". The fish rests on fine cuttlefish tagliatelle, from which the ink has been removed to make a small sauce. In short, a lovely dish with clean, balanced flavors. Next, a nostalgic sequence "in memory of our grandmothers" with a beautiful poultry on which we pour a tartar condiment with crispy shallot slivers. Peas and spinach in different textures provide a cheerful accompaniment. The dessert may seem "simple", but its lightness and gourmandise will win you over with chocolate, vanilla, caramel and hazelnuts... It's iced, it's hot, it's crunchy, it's soft, it's creamy... In this authentic watermill with its incredible charm, in the main dining room where wood panelling and paintings are combined with warmth, or in the luminous dining room overlooking the river, the staff work with urbanity and speed. The wine selection is the house's other trump card: meursault from domaine Jobard or Roulot; anjou from Richard Leroy; Mann in Alsace; châteauneuf du pape Rayas, hermitage from Marc Sorrel or Chave, vosne romanée from Sylvain Cathiard or Georges Noëllat, Vaccelli in Corsica...
