The vineyards of Chambolle naturally take pride of place at Matthieu Mazoyer's, and the signage reflects this. In this beautiful Burgundy brick and stone house, the tasting cellar is an added bonus to the many assets, including the beautiful contemporary dining room, where you can sample the chef's creations at their best: chartreuse de gambero morteau and foie gras, beurre blanc mullet de ligne, pomme de ris de veau bouillon de coquillages à l'ail des ours and couteaux de Cancale. Precise, inspired and well executed, this short seasonal menu is full of great ideas. A good discovery menu at €44, and an impressive cellar of all the great Burgundy vintages.
