Gourmet Restaurant This Mermoz, which enjoyed its first hour of glory under the stewardship of the now-ubiquitous Manon Fleury, has been back in the spotlight since the arrival at the end of 2023 of Alice Arnoux, previously at Le Perchoir. The general spirit of this chic, unadulterated bistro hasn't changed fundamentally (fine produce, familiar recipes), but we can once again see that little extra soul that makes all the difference: a gourmet toasted brioche topped with a thin slice of beef tongue, lightly warmed scamorza and wild garlic, a perfectly cooked ikejime red tuna with spinach and tender calçot onions before an obviously consensual rhubarb pavlova (cut into thin slices) with a divine Greek yogurt mousse and a few shiso leaves. Very nice cellar, active and smiling service, pretty hefty prices (around €60 for a full à la carte sequence).
