Chef's Restaurant At the foot of the citadel, on an open square overlooking the Doubs River, the former 18th-century armory offers its historic stone to Jean-Charles Lavier's table. The chef creates a menu that evolves with the seasons, with well-crafted dishes that show what quality bistronomy should look like, such as Burgundy snails with herb butter, escorted by a pea mousseline, a mushroom crust, pike-perch a la plancha, herb risotto and beurre blanc, free-range chicken with mashed potatoes, vegetables and comté sauce, or vanilla crème brûlée with Fougerolles sour cherries.
