In the heart of the Champagne region, this handsome, bourgeois-style 3* hotel is an opportunity to rediscover the region's classics, both in the glass and on the plate, under the direction of chef Gilles Oliveau. The table displays a certain professionalism, demonstrated at every turn by the serious table setting and beautifully presented dishes. The €33 menu offers a fine local flavor, both in terms of product and technique, as in the quail and pigeon terrine, sea bass escalope with langoustine coulis, thinly sliced leeks and oyster mushrooms, roast duck breast, sweet and sour with blackcurrants, or the red fruit parfait glacé. Well-informed cellar.
