Chef's Restaurant On the banks of the Loire, Philippe Bardau's restaurant is one of the prefecture's top references, with its panoramic view from the top floor, its ultra-contemporary decor (a mix of Alessi, Starck and Kartell), its local cuisine and its Loire cellar. The chef has as much an eye for detail as he does for produce, which he works with aestheticism and an awareness of the seasons. On the à la carte menu: perfect egg with parsley cream and Lautrec garlic emulsion, crispy snails and potato spaghetti, one-sided pollack, gnocchi with old parmesan and bottarga, purple artichokes sautéed raw, three-course Beauce hare, caramelized Angers quince tatin-style, Sologne honey sorbet, creamy dulcey and Ceylon cinnamon chantilly.
