Chef's Restaurant The entrance is discreet, but the reward is there: an elevated panoramic view of the banks of the river, just above the Place de Loire, an ultra-contemporary setting with designer furniture, and last but not least, Philippe Bardau's cuisine, the perfect way to rediscover the region's terroir. The dishes have a taste of the countryside and authenticity, a comforting return to basics, such as this delicious Sologne pheasant in ravioli printed with tarragon, parsnips, crunchy chestnuts and albufera sauce, a yellow pollack from Morlaix Bay just pearly Grenobloise-style, texture of cauliflower and Iberian chorizo, a fine three-course presentation of Sologne venison: back, jig and fillet, a famous Beauce hare à la royale à la façon d'Antonin Carême, and finally a hot soufflé with Victoria pineapple, Gâtinais saffron sorbet and gin from That boutique - Y Gin Co.
