Remarkable Restaurant Tristan Robreau takes us on an elastic journey between Tokyo and Orléans, the Ara River and the Loire, a journey that reflects both the pleasures of the Loire and those of the Land of the Rising Sun, between two shores and two cultures. This association begins with a taste for the demanding, before learning about sweet, salty and umami, through compositions of Japanese exactitude, right down to this extremely well-defined and precise ballet, where everyone is served at the same time. In five acts, the trout dashi ponzu in a beautiful broth, the sea bream sabayon miso, lightly smoked and nicely textured, the crab in gyoza and green curry, very well balanced, the pigeon and black beans, perfectly cooked. The dark chocolate and madras dessert is intelligent and fragrant. The cellar is a little short but quite sharp, with references from France and abroad (Clos de l'Oratoire, Pichon, Bellevue, Château Simone, Les Fiefs de Lagrange). Around ten choices by the glass.
