Remarkable Restaurant Twelve years on and still going strong for Nicolas Borombo, both artist and craftsman. A sense of history and terroir is important to this forward-looking chef, who is as aware of his roots as he is of the horizon. This is how the idea of sustainable cuisine, concerned with ecological issues, naturally took root in the oldest house in Saint-Jean-de-Luz. In the same movement, we contemplate a plate designed for tomorrow, and in a reflection, the 1540 engraved in the ceiling beam. The space thus created, both dense and ample, offers room for a gastronomy firmly anchored in its time: fresh txangurro, avocado with agastache, granny smith apple, blanc manger with lime, coral powder, pomelos, lime and yellow gel, honeycomb tuile with squid ink, raspberry sorbet and piquillos, in a beautiful variation, roasted Saint-Brieuc Bay scallops, Colonnata bacon voile, green Puy lentil mitonnée, sparkling bard broth, gourmet black truffle and nasturtium; finally, l'instant chocolat, pressed shortbread, 72% araguani cream, 33% tanariva milk chocolate chantilly, yuzu gel, cocoa powder with red Kampot pepper, warm chocolate sauce, hazelnut chocolate ice cream and gianduja. Very fine cellar, with references for every occasion.
