Chef's Restaurant Elise Veyrat is learning to run a house with a name that must be respected and honored, while keeping her first name and identity to herself. This is the paradox of "Hameau de mon père" (My Father's Hamlet), which must one day become "La maison d'Elise" (Elise's House). Of course, it's not a question of cutting this essential cord. The setting is still breathtaking, with its panoramic view of the Aravis mountains, the cachet of the hamlet with its little cottages and herb plantations, the room with its antique furniture and objects, its large picture windows and the henhouse visible below through the glass panes on the floor. The welcome is warm, the atmosphere relaxed, and the chef takes charge of presenting the menu of the day according to current supplies and the "treasure of our pickings": fennel served marinated and frittered, accompanied by lovage for a very fragrant and crunchy vegetal plate, féra "back from lake fishing" perfumed with sage, poached poultry served with a yellow wine sauce and spring cabbage "inherited from our farms". The cellar of grands crus is gradually being equipped with more accessible regional wines, and Elise's team is young, resourceful and highly motivated.
