Gault&Millau's review 2026

Tucked away between the covered market and the Grande Rue, Gustalin is one of Dole's best-kept addresses, both warm and intimate, with a lovely terrace for fine weather. The cuisine is divided between the semi-gastronomic and the more traditional, with two complementary menus at €42 and €31. On the local side, you'll find Bonvalot snails in parsley sauce, Morteau sausage with Jura lentils, cancoillotte emulsion and vegetables, fried fresh trout from Beuque, French fries and vegetables, and a crème brûlée with pistachio and Fougerolles griottines, cherry sorbet.
