Remarkable Restaurant Stability and bourgeois comfort in a grand house: the Jallerats' Grand Monarque still shines in Chartres' firmament, the house is beautiful on the square at the edge of the old town and a ten-minute walk from the cathedral. Thomas Parnaud also symbolizes this regularity in the restaurant. Over the past few years, he has maintained his three toques, refining and refining his approach with a touch of terroir, technique and inventiveness, and an eye for gourmet delights: a fine Empreinte menu at €126, featuring a lovely green bean shrimp mousseline with smoked butter, bouchot mussels and local saffron, smoked Culoiseau poularde and a pleasant strawberry elderberry tomato dessert. All menu items are available à la carte, enriched with a few suggestions of the moment, and the extensive wine cellar offers some major pairings.
