Chef's Restaurant Christian Morisset's restaurant is a must, located in a splendid building near the ramparts. The charm of the old mingles with the excellence of the service, to give life to an interesting experience that seems to have regained momentum of late. Roasted scallops from Morlaix Bay, Timut pepper squash, black radish, pomegranate, coriander, lime, pomegranate espuma and orange blossom nage, roasted turbot with potato and truffle crust, truffle and sherry jus, the signature dish of saddle of Alpilles lamb, squash gnocchi and truffles, seasonal vegetables and thyme flower jus, the lavender flower crème brûlée - all the fine work that the former Juana chef is accustomed to producing. A fine cellar with great names from the leading regions and a wide selection from Provence (Milan, Rimauresq, Ray-Jane, Sainte-Marguerite, La Calisse...).
