It's a bourgeois mansion, a 3-star hotel and spa that also houses Stéphane Pugnat's restaurant, plush and elegant. In this room with its fireplace, where white tablecloths are set with Sunday crockery, families come to celebrate special occasions over fine Normandy cuisine. Noble products serve as the backdrop for solid compositions, such as blue lobster with basil and sunflower pesto, artichoke grecque with raspberry and vegetable pickles, sole de sable meunière with raspberry and grilled sun vegetables, cotentin lamb in a wild herb crust, tomato chutney with oregano, Chaiseronne veal sweetbreads in a casserole, red bell pepper coulis, eggplant moelleux with chorizo, crêpes Suzette with Grand Marnier. Good service.
