Chef's Restaurant The restaurant is still in its infancy, but has recently earned its second toque, making it one of the department's best-known restaurants. At the helm, Luc Parmentier and his partner Nathalie Borgne, sommelier, complement each other perfectly to bring this cheerful, contemporary establishment to life, where weekday lunchtime diners come in a flash for the impeccable €22 daily menu, before returning for the Saveur menu and its fine inspirations: velouté de champignons à l'œuf parfait, copeau de Cantal et jambon cru, médaillon de paleron de boeuf confit et bramata crémeuse aux tomates séchées avant un financier moelleux amande, poire et caramel en dessert. Nice Auvergne cheese platter (for a reasonable supplement), cellar with interesting Auvergne choices.
