Gourmet Restaurant No one would think of soaping up the Planches, which is celebrating its 100th anniversary, in the mythical surroundings of a house that is no less mythical, solidly managed by the Barrière group. The spotlight is always on fish, and there's no question of getting off the track when all the classics are there: oysters and seafood, sole meunière, salmon coulibiac, bouillabaisse, salt-crusted sea bass. The new chef, Adrien Antzenberger, is tasked with staying the course - he's bringing back Billy By, a mussel soup - while modernizing the staff. For the new Deauvillais, young people's dishes: arancini, lobster and beef ravioli, tuna tataki, yellowtail sashimi...
