Chef's Restaurant Fabien Ferdinand is right at home in the heart of the Alps, in this little hamlet not far from Briançon. The house is just like him, a spirit of authenticity and closeness to nature, breathing fresh mountain air and a taste for fine produce. Don't let the apparent simplicity of the premises fool you: the chef has worked in some of the world's finest kitchens (Lassausaie, Gagnaire and Darroze), and proves his experience with fine gourmet menus starting at €56. These include lobster and artichoke petit violet, sabayon with Saint-Crépin organic saffron; wild turbot and French peas, yellow zucchini, white wine foam and bone fumet; and Bourbonnais poultry breast, braised, with broth vegetables, morels and lovage cream. Beautiful desserts.
