Uninformed, you could walk past ten times without guessing that this is one of the best-known restaurants in this corner of the Var, on the edge of the Alpes-Maritimes. David Carré's traditional cuisine is as renowned as it is discreet, served in the comfortable dining room or on the garden terrace, away from the noise: compressed foie gras and beef aiguillette with local wine, lobster ravioli and sweetbreads, Rossini-style pigeon supreme, hot and cold pineapple declensions. The cellar also relies on loyal customers (Selves, Figuière...).
