The work of a pro, a cuisine of great tradition, the kind you find in books and on fine tables. Christophe Quéant was trained at the right school and knows how to cook turbot, sweetbreads and other talents. With ease, he draws up a two-toque menu, with logically high prices, nourished by noble products and princely preparations: "frivolité" of smoked salmon with crab, peas and osciètre caviar, white of sole au naturel with bercy mushroom sauce and young shoots, soufflé with verbena liqueur. With cheese, this "Petit Pasumot" menu is nicely priced at €118. The 5-course menu, including lobster, is €148. Cave de grands crus.
