In this solid and beautiful Breton house, tradition has a good taste and is constantly evolving, thanks to chef Christophe Le Marrec, who knows his terroir well and knows how to bring it to life. Over the past seven years, and after a stint at the Ville Blanche, he has forged strong links with both his producers and his clientele, who know how to find the natural well embellished here: snacked bay scallops parsnip mousseline with lemon wok vegetables, filet de saint-pierre parsley root purée butternut confit with honey parsnip leek fish velouté. A good menu at €45, with elaborate desserts such as the trompe-l'œil cigar with cocoa tuile caramel beurre salé chocolate ganache chantilly white chocolate hazelnut ice cream.
