Chef's Restaurant Two unique menus at €95 and €120, to discover the nuggets of chef Keishi Sugimura, master of his subject in both form and content. The venerable house offers remarkably aesthetic compositions, delicately showcasing the region's finest produce. We move on to a semi-cooked trout with a declination of peas, mint and strawberries, before seeing shrimp and scallop pudding, perfect egg, lentils, shellfish consommé, lemongrass and ginger, followed by Bresse poularde, fresh stuffed morels, seasonal vegetables and Madeira sabayon. À la carte, pigeon from Mr. Sanchez, or wagyu beef. Nice cellar.
