Gourmet Restaurant Slightly away from the city center, in the Fontgiève district, chef Manh Ha Doan and his wife Uyen run one of Clermont's most creative restaurants. After a stint at La Belle Meunière with Laurent Jury, the chef opened his own establishment, combining his North Vietnamese culture from Haïphong with his love of Auvergne. His "between two lands" menu is a fine blend of dishes: roasted and velvety squash, bursts of goat's cheese, honey, sage and lavender vinaigrette; roasted haddock fillet, anchovy sauce, dried fruit, rice pilaf and corn salad; or shredded Allier turkey, Mexican mole sauce, citrus and coriander pavlova, bergamot sorbet.
