Chef's Restaurant It's a remarkable 4* hotel in the heart of the Périgord Noir, condensing the entire region into an experience that's both exotic and authentic. The luxury of the hotel-spa extends to the ideas of chef Pascal Lombard, who showcases the local terroir in aesthetically pleasing, meticulously-crafted compositions. Start with a starter of morel mushroom, leek and vin jaune, a combination of sweet onion, hay and sunflower, a trip down river with ikéjimé trout from Les Eyzies, wild cream and plum blossom, a rack of free-range pork, peas and kumquat, suckling lamb, green asparagus and wild garlic, a dessert of grand cru manjari, borage and birch.
