Chef's Restaurant It's a journey to the heart of Périgord Noir, through time and terroir, in a luxurious setting. The 4* hotel is one hundred and sixty-two years old, and offers an experience stripped down to its essentials, directed by chef Pascal Lombard. He cultivates the produce, either in his vegetable garden or sourcing it from around the world, bringing together in his dishes an identity that is understood and authentic. The refined elegance of the table is matched by the aesthetics of the plates, which include Montignac duck, caviar and black garlic, carrot tops with pollen and kumquat, Périgord veal fillet, zucchini flower and vegetable jus, smoked pigeon with juniper, brocoletti and pistachio, and a dessert of apricots, hay and lavender. Very fine cellar.
