Maxime Lamon, who graduated from Vatel in 2017, worked in a number of establishments, then quickly took over his parent's paillote, keeping the spirit and infusing rigor and professionalism into the kitchen. The brigade is serious, the choice of products and their treatment applied and rather well done, which is a pleasant surprise, all the more so by the beach. If you dig a little deeper, the Lamon family is the only one to own the land on which their straw hut stands and the surrounding area, and has done so for seven generations.
