This house of tradition is moving in the right direction by regenerating itself, in the first sense of the word, as son Nicolas Tissier gradually takes over the reins in the kitchen. His father Philippe, on the other hand, is now in charge of the dining room, welcoming his loyal clientele with savoir-faire, and supporting his wife. In this wise, bourgeois dining room, the €60 menu is a good deal, controlled and pleasing: soft-boiled egg in a crust, black truffles, crosnes and salsify with Parmesan, line-cut St. Pierre, fregola verde with shellfish, samphire, parsley-lemon emulsion before a good clementine dessert. Some fine dishes on the à la carte menu, such as sweetbreads with morel macaroni and cream, a tempting cart of mature cheeses and a classic cellar.
