Located in the 4* L'Univers hotel, La Touraine is a good example of a successful hotel table, offering a tasteful, uncluttered setting suitable for all occasions, and featuring technical, seasonal cuisine that doesn't take too many risks. The €37 menu offers very good value for money, with open raviole of button mushrooms, sparkling Vouvray emulsion, scallops in hazelnut butter, squash cromesquis, orange wine sabayon and roasted hazelnuts, guinea fowl in two courses, cider jus and caramelized salsify, a fine butcher's cut with Noirmoutier pommes grenailles, pepper sauce. Successful desserts include chestnut and milk chocolate millefeuille, and poached pear with verbena, honey cream, gingerbread and pear-lemon gel.
