Gourmet Restaurant After Jonathan Grayon and Étienne Catelain, it took a bold move to take over this address, which they put at the top of Le Havre's gastronomic scene. Antoine and Andréa have the ambition and the courage, and it's a welcome restart in this unchanged setting, still elegant and well-kept, with its indigo walls and light wood tables, the purity of the decor and the engaging friendliness of the service. The chef's approach is one of continuity, with creative combinations that would benefit from a little more simplicity, and an execution that has yet to evolve. Meticulously presented dishes include a declination of cucumber, runny egg, pickles and fresh herbs; a saddle of rabbit with fig, roasted hazelnut crust, rosemary polenta and viré-clessé reduction, roasted onions and cocoa streusel; a chocolate finger, salted butter caramel with Madagascar vanilla, almond shortbread and coconut-verbena ice cream. Cellar to be expanded, already offering a few ideas (Christian Morin, Paquet, Serge Laloue).
