Chef's Restaurant Once a communal house, then a brasserie, this 16th-century residence, skilfully transformed by Jean-Daniel Seltz, has become a charming stopover on the Alsace wine route. In such a historic setting, this masterpiece of good taste skilfully combines ancient and modern in an atmosphere that is both elegant and relaxed. After an aperitif in the glass-roofed lounge, enjoy the timeless charm of the dining room, dominated by stone, wood and leather. The kitchen has gained in personality and character. The meal gets off to a great start with the famous Maréchal des Contades pâté with goose foie gras, invented in Strasbourg in 1780 and brought up to date with a gourmet stuffing enriched with foie gras: a model of its kind at the three-toque level. We love the authenticity of the scallops served in their shells, accompanied by a delicious bard jus, fennel and a hint of orange, even if the hazelnut butter in slight excess deprives this dish of lightness. The Wingen salmon trout, plump and carefully cooked, is highlighted by a delicious "blanquette" sauce, enriched with trout roe. Ballersdorf veal, served meltingly tender, is accompanied by crushed butternut squash and a well-reduced, aromatic jus; the whole is adorned with a bold caramelized cabbage leaf. We found the desserts more basic: the chocolate mousse, while powerful and well-balanced, is served as a quenelle on a small plate. As for the apple tart, original for its high rim and buttery pastry, the slightly charred base makes it less pleasant than promised. Like the kitchen, the cellar cultivates openness, modernity and discovery. Service is diligent and dedicated, but not yet trained to announce and inform about the contents of the plates.
