Gourmet Restaurant Inside the handsome, modern Musée de la Romanité, Franck Putelat, Carcassonne's chef with four toques, has put together an attractive menu, well executed by his teams, contemporary and regional at the same time, in a chef's bistro spirit. Delicacies to share (paleta de bellota, marrow bone...), classics (brandade, tartare, gambas risotto...) and generous, signature dishes, such as pot-au-feu, Franck Putelat salad, or pig's cheek with lentils and beer. Good desserts, well-thought-out menus, including a top-of-the-range "Signature" at €85. Large wine cellar with all the good wines of the region (Mourgues du Grès, Mas d'Espanet, Roc d'Anglade, Gournier en cévennes...).
