Chef's Restaurant There's so much to do and discover at the Merville home, from the chambre d'hôte to the coworking space, from the vegetable garden to the brazier, not forgetting Thierry Merville's famous table de table. For over twenty years, this 19th-century house has been the place to be for all occasions, from family gatherings in the private gardens, to simply enjoying the pleasures of the chef, capable of endlessly revisiting his beloved region. You can discover the "world's best cassoulet 2019" on the €50 menu, or follow the trail of the seasons and coasts on the €65 terre, mer et jardin menu, with Occitan veal and Bouzigues oysters tartare, Dubarry cream and herring caviar, chorizo-crusted Mediterranean red tuna, roast duckling fillet, ponzu jus and pumpkin purée, "1000 feuilles" of crispy puff pastry arlettes, vanilla bean princess cream, vanilla ice cream and dairy caramel. Express menu at €29 up to €95 for the tasting menu.
