This pretty village house is home to Eric Rolland's table, which offers inventive, technically sophisticated local cuisine. The style is slightly bourgeois, but in all cases offers a comfort that engages the experience, revealing relevant interplay of textures and flavors. Tuna and salmon ceviche in a sesame crust, citrus and ginger soy sauce, mango, avocado and crunchy vegetables, Thai herbs and preserved lemon vinaigrette come to mind, as does the oven-roasted return of the peach under a viennoise, fish soup jus, saffron aioli, stuffed squid and fennel confit compote, roasted potato palet and artichoke cream, island-flavored mango, pineapple, passion and tarragon minestrone, passion coconut coulis, crispy streusel and poppy meringue, kalamansi ice cream.
