Remarkable Restaurant It's talent, but also consistency and loyalty that make for lasting success. And so it is that Xavier Mathieu is the master of this part of the Luberon, now reigning unchallenged for miles around. Le Phébus is shining, and all the better for it, for the chef, in this superb setting on the heights of the village, still has so many wonderful things to share. On the splendid terrace, you can enjoy the light, often the sunset, and the delight continues at the table: with the remarkable salt-crusted roasted fennel, impeccably soft and with its flavor fully preserved, the Provençal cod and yellowtail raite, the leg of lamb and its fricassee of small spelt and split peas with a full-bodied jus. And when it comes to Provençal tradition, the chef is right on hand, and you'll remember his faithful, gourmet version of pieds paquets. Beautiful seasonal desserts (petit épeautre again, as a regional standard, like a rice pudding, with almond milk infused with népéta), logically high à la carte prices, but an excellent menu at €145, and a well-stocked luberon ventoux cellar, with grands crus from all over the valley (a good choice of châteauneuf) and the great regions.
