The chef, who has worked in some of the world's top establishments (Chèvre d'or, Lasserre, Joël Robuchon's workshop), creates a personal, graphic cuisine that reflects his experience and good taste, with ideas that combine local produce, as in the very attractive €105 menu, with maigre confit, dill whipped cream, cucumber and baeri caviar, sea trilogy (aïoli, saffron potato, cébette and beet, fish soup), roasted Bresse lamb chops, panisses and onion cream, savory jus..
