Michèle's cuisine reflects this setting, a little precious and open to diverse influences: organic Corsican sea bream tartare with lemon ginger and coriander, kidneys and sweetbreads in Madeira butter knepfle sauce, rhubarb with cinnamon, strawberries and raspberries.
