Laurent Prat continues to amaze us at his off-center home in Ramonville-Saint-Agne. The restaurant, open only on weekdays, is often full at lunchtime, with a high-performance lunch menu at €25.50 that delights the canton, and relaxed yet professional service. In the evening, in addition to the à la carte menu, menus are available at €40 or €57, and a vegetarian option is also available, with seasonal offerings such as green asparagus gratin with parmigiano reggiano and marrow bone, creamy lemon egg and fresh herb pesto. Masterful dishes such as red mullet in bouillabaisse or a playful dessert, the galet coco in its singularity, where the different combinations and tastes are fun to discover. A varied and rather expensive wine list, with a decent selection by the glass.
