Chef's Restaurant It was a gamble to set up in this suburb far from the center of Toulouse, but Laurent Prat was right: his business is a great success, especially at lunchtime (with an unbeatable €25.5 menu). On this particular evening, the two dining rooms with their distinguished wood decor were half-full, with a clientele made up mainly of local connoisseurs, and all with a smile on their lips, which also rubbed off on the service, perfectly in tune, as professional as it was relaxed, at ease in serving the fine cuisine, a touch exotic and always accomplished, from two toques. There's something for everyone, especially since it's possible to mix and match. Special mention goes to the divine sweetbread, accompanied by an exquisite carrot/orange/ginger mousseline, the highlight of the meal, as well as the bluffing cheese preparation around the Echourgnac trapdoor, ribot milk, buckwheat nougatine and honey ice cream. The wine list, though well-stocked (some 100 references), is a little onerous and lacks a wide selection by the glass.
