You don’t change a winning formula, and David Guitton—ever since we first walked through the doors of his chic restaurant nestled among the vineyards a dozen years ago—has stayed true to his concept: chef-driven cuisine featuring fresh ingredients, without frills or unnecessary complexity, evolving with the seasons in a concise, well-thought-out menu: raw-marinated line-caught whitefish, sweet potato, lemon, and cilantro; a vegetable dish with peas and lovage; Tauzin chicken in karaage style with eggplant, and a dessert of strawberries, hibiscus, geranium, and white chocolate. A tasteful atmosphere in a lovely setting surrounded by nature and vineyards, with a wine cellar that’s, of course, well-stocked with regional wines.
