The house has changed hands, but not spirit, and chef Eric Hubert maintains a line of fine products, even prestige on certain à la carte suggestions (langoustines, foie gras). The €38 menu is a fine choice, with ballottine of Vendresse trout, fennel, turmeric and preserved lemon, roast guinea fowl supreme with green pepper sauce, preserved tomato with raspberry compote and pink cookie ice cream, and a warm welcome from Françoise Hubert.
