Chef's Restaurant Sébastien Méhaux (two toques and former 109 at his Saint-Pol-de-Léon restaurant) has integrated perfectly into his new home, offering Vichy one of its most ambitious and interesting tables. Following in Antoine Souillat's footsteps, the chef maintains this fine central gastronomic table, exploring elegant combinations and inventive seasonings, knowing how to be as demanding in content as he is in form. The €89 menu lives up to its promises, with dishes featuring potato, iodine, mezcal and buckwheat; scallops and leek revisited with nori; an alliance of red mullet, butternut and red shiso; a sweet of chocolate, pecan, coffee and porcini mushrooms; a gingham, lemon and mint pastille; and a dessert of rice, citrus, fig leaf and almond. Well-stocked cellar (domaine de Bellevue, Louis Chèze, Mélanie Pfister, domaine Girard etc.).
