Chef's Restaurant The regular efforts of Olivier Delbergues and his wife Maryline to maintain a very high standard deserve to be highlighted once again. Just a stone's throw from the Halles Paul Bocuse, this large, elegant dining room offers a chef's cuisine, tightening prices and bolts on well-sourced ingredients in a wide selection. We particularly appreciate the slate lunch sequence, at €30.50, with the other day a sort of méli-mélo like the salade folle of yesteryear, with haddock, smoked duck and mussels on a creamy mushroom sauce, mustard-seed rabbit, confit then grilled, mashed potato with candied shallots, and the good hot soufflé with chartreuse and Valthona chocolate shavings for a small extra €5. Evening menu with noble ingredients at €53, good formula at €38.
