Chef's Restaurant In the space of twenty years, Anne and Pierre Weller have transformed the former Hôtel de la Marne into a wellness destination, much sought-after by guests in search of tranquillity. In the taupe-toned dining room, lined with bamboo, charm and design combine to create a contemporary cocooning experience. Pierre Weller acquired his solid foundations from Alain Ducasse, Fernand Mischler and Antoine Westermann, and his inspiration from his travels in Japan and South America. We love the boldness of this terrine of pan-seared Alsace farmhouse duck foie gras, paired with boudin soup, quince compote and apple-boudin crumble. Or scallops served raw, in carpaccio, whose freshness is enhanced by granny apples and fennel. The very fresh sea bass, nicely roasted on its skin, is accompanied by beautiful chanterelles and squid ink gnocchi (we would have preferred the sauce to have been better highlighted). Sweetbreads and veal entrecôte, escorted by a fine leek tart, are underscored by a powerful sage jus, albeit a little too sticky. We conclude with this very pleasant vanilla tart, a little dominated by the flavor of hazelnut. Similarly, in the elegant chocolate-hazelnut composition, the hazelnut prevails over the chocolate, present in small proportions. We accompany this lively cuisine with wines from a connoisseur's cellar, rich in prestigious vintages from all over France.
