If every village had a Remise like this within fork's reach, with a straightforward, no-nonsense approach and the same friendly welcome, we wouldn't just have 5,000 addresses in France, we'd have at least double that number. And yet, even without a chef's hat, this Issole valley address is a rarity, with its sincere atmosphere, wide-ranging and varied offering, and extra dishes on suggestion, a sign that the chef is always looking to improve on the ordinary. With mussels au gratin or frogs, poultry vol-au-vent or lamb mouse confit, and a quail stuffed with grapes and Armagnac the other day, there's nothing to complain about, and even more to ask for. Cellar formed with local winemakers.
